🌽 10-Minute Korean Corn Cheese - Very Easy Oven, Microwave, or Skillet Recipe
Sweet corn, creamy mayonnaise, butter, and stretchy mozzarella make Korean corn cheese one of the easiest comfort foods to put together at home.
It is familiar in Korean restaurant and casual drinking culture, where it can appear as a side dish or anju, but it also works perfectly well as a simple home snack.
You do not need special equipment.
You can make it in an oven, microwave, or small skillet.
Keep the basic version simple for kids, or add jalapeños, green pepper, and sliced olives for a more savory adult version.
Korean Corn Cheese Is a Modern Korean Favorite
The ingredients may look Western at first glance, but the corn cheese commonly served in Korea has become a familiar part of modern Korean restaurant and drinking culture.
The basic idea is straightforward:
sweet corn + mayonnaise + butter + a little sweetness + mozzarella.
It is rich, sweet, savory, and extremely easy to customize.
Canned Corn Is Convenient, but Fresh Corn Works Too
Canned sweet corn is the easiest option.
Pour off the packing liquid and use the kernels.
You do not need to squeeze the kernels dry or pat every kernel with paper towels.
The important point is simply not to pour the canning liquid into the corn cheese.
If canned corn is difficult to find, boil fresh corn and remove the kernels from the cob.
For this recipe, use about 300-340g corn kernels.
Can sizes and drained weights vary, so do not treat “1 can = 340g kernels” as a universal conversion.

Using Allulose Instead of Sugar
Allulose can be used instead of sugar.
Do not automatically assume every allulose product should be substituted gram-for-gram for sugar, because sweetness can vary by product.
Adjust according to the product you use and your preferred sweetness.
I do not recommend honey for cooking for this particular corn cheese.
Honey for cooking can work beautifully in other recipes, but its distinct flavor changes the character of this corn, mayonnaise, butter, and mozzarella combination.
Sweetener substitutions should be chosen for the specific dish rather than treated as a universal rule.
Optional Toppings
For a Spicy Adult Version
- Jalapeño: About 15g, finely chopped
- Or a small amount of Cheongyang chili
If using pickled jalapeños, use the pieces rather than pouring a large amount of the pickling liquid into the corn.
For Green Pepper Flavor
- Green bell pepper: About 30g, finely chopped or thinly sliced
This recipe intentionally uses green pepper rather than red or yellow sweet peppers.
A small amount gives the rich corn and cheese a sharper fresh note.
For a Salty Pizza-Style Accent
- Black or green olives: To taste, sliced
Start with a small amount because olives can be salty.
They work especially well with jalapeño and green pepper.
👩🍳 Make the Corn Mixture
1. Prepare the Corn
If using canned corn, pour off the packing liquid.
There is no need to dry the kernels completely.
If using fresh corn, boil it first and remove the cooked kernels from the cob.
Prepare about 300-340g corn kernels.
2. Mix the Seasoning
Combine the corn with:
- 45g mayonnaise
- 12g sugar
- A pinch of black pepper
If using allulose, adjust it according to the sweetness of your product.
Finely chopped jalapeño or green pepper can be mixed in at this stage.
Olives can either be mixed in or placed on top.
3. Add the Butter
For the oven or microwave method, spread 15g butter over the bottom of the cooking dish.
Add the seasoned corn and spread it evenly.
For the skillet method, melt the butter directly in the skillet instead.
4. Add the Mozzarella
Spread 100g shredded mozzarella evenly over the corn.
Then choose one of the three cooking methods.
🔥 Method 1: Oven
Preheat the oven to 200°C / 392°F.
Bake for about 6-8 minutes.
Do not judge doneness by time alone.
The corn cheese is ready when the mozzarella has melted completely and parts of the top and edges are beginning to brown lightly.
Ovens vary, so watch the cheese toward the end.
⚡ Method 2: Microwave
Place the prepared corn cheese in a microwave-safe dish.
Microwave it uncovered for about 2 minutes 30 seconds to 3 minutes.
Microwave power varies.
The important finishing cue is that the mozzarella should be fully melted and soft throughout.
It does not need to brown like the oven version.
🍳 Method 3: Skillet
Melt 15g butter in a small skillet over low heat.
Spread the seasoned corn evenly in the pan.
Top it with 100g mozzarella.
Cover the skillet and continue cooking over low heat.
Rather than inventing a fixed cooking time, watch the food.
It is ready when the corn is hot and the mozzarella is completely melted.
Keep the heat low so the bottom does not scorch before the cheese melts.
🧈 No Cheese? Make Butter Corn Instead
If you do not like mozzarella, you can make a cheese-free butter corn variation.
Prepare the corn with the same basic seasoning:
corn + mayonnaise + sugar or allulose + black pepper
but leave out the mozzarella.
Melt 15g butter in a small skillet.
Add the seasoned corn and stir gently over low heat until the corn is warm and the butter and mayonnaise are evenly incorporated.
There is no stretchy cheese texture, but the buttery corn flavor becomes more prominent.
Jalapeños, green pepper, and olives can still be added if you like.
💡 Ajumma's Tips
Draining canned corn does not mean drying the kernels completely.
Pour away the packing liquid.
That is enough.
There is no need to squeeze out the moisture naturally held inside the kernels.
Finely chopped green pepper can be useful for a kid-friendly variation.
A small amount mixed into sweet corn and cheese may make the vegetable less prominent in each bite.
It will not guarantee that every child will enjoy vegetables, so start with a small amount.
Jalapeño is excellent for the adult version.
The spicy and tangy note cuts through the rich mayonnaise and melted cheese.
It works especially well when the corn cheese is served with beer or wine.
Try sliced olives on top.
Black or green olives give the corn cheese a salty accent similar to pizza toppings.
A combination of jalapeño + olives + a little green pepper makes a good adult variation.
Allulose can replace sugar here, but honey for cooking is not my choice for this recipe.
Sweetener substitutions should fit the actual dish.
🥖 Serve It with Garlic Baguette
One of my favorite pairings for corn cheese is garlic baguette.
Spoon warm corn cheese over a crisp slice of garlic bread.
The garlic and butter from the bread work especially well with the sweet corn and melted mozzarella.
You can also use:

- Sandwich bread
- Dinner rolls
- Soft rolls
Serving corn cheese with bread makes it more filling and turns it into an easy breakfast or light meal.
🌶️ Hot Sauce, Chili Sauce, Tomato Sauce, and Pickles
Rich corn cheese also works well with something spicy or tangy on the side.
Try:
- Tabasco or another hot sauce
- Chili sauce
- Tomato-based sauce
Keep these sauces on the side or add only a little to each bite rather than mixing a large amount into the entire dish.
A hot sauce is especially good with the jalapeño-and-olive version.
And do not forget pickles.

From Kids' Snack to Adult Anju
Keep the basic version simple for a kid-friendly snack.
For adults, add:
jalapeño + olives + green pepper
